It’s been really nice to be home so much this Fall and one of my goals as I get back into a little routine has been to organize more impromptu girlfriend nights! Maybe watching a movie off the AFI list, opening up a bottle of wine, and of course: making delicious treats! This pizza recipe from Blue Apron is just BEYOND. It only takes about 40 minutes total to make (with a break while the pizza cooks) and it will knock your friends’ socks off – it seems so much more complicated than it actually is!!!!
(And that’s why I love Blue Apron so much – they always teach me something new – in today’s case, making spicy truffle honey, but they make me look good. My new friends in Charleston think I’m a good cook.. ha!)
The recipe is below. This was one of those recipes where I was happy I had Blue Apron as some of these ingredients are harder to track down at a regular grocery store. Hot Truffle White Pizza Recipe!
- 2 oz. Fontina Cheese
- 1 Tbsp Honey
- 16 oz Pizza Dough
- 2 cloves Garlic
- 4 oz Fresh Mozzarella Cheese
- 1/4 tsp Truffle Zest Seasoning
- 2 ears Corn
- 1 bunch Chives
- 1/2 cup Part-Skim Ricotta Cheese
- 1/4 tsp Crushed Red Pepper Flakes
Start by preheating the oven to 475 degrees.
Then, do your prep work. Wash all produce, remove husks and silks from corn, scrape corn kernels off of the ears of the corn. Thinly slice your garlic, grate the cheese!
Lightly oil a pan and then stretch the pizza dough out on the pan. Drizzle with olive oil and then top with corn, garlic, and cheese. Tear up your fresh mozzarella and put that that on top. Bake the pizza for 20 minutes at 475 degrees!
While the pizza is cooking, prep your toppings. Thinly slice the chives, mix your ricotta with salt, pepper, and a drizzle of olive oil. Make the truffle hot honey (combine honey, pepper flakes (I went lighter on these) and truffle zest).
When pizza is cooked, let it cool at least 2 minutes and then transfer to a cutting board. Top it with the seasoned ricotta, sliced chives, and ricotta honey. Invite friends over and let everyone think you are a cooking goddess.
