Hello (or Hej, for that matter) from Copenhagen! My friend Stanley and I arrived on Thursday at noon (we took the red-eye from JFK) and it’s been pretty much non-stop since our arrival! I will of course have a blog post up soon about my time spent here and all of my recommendations, but I’ve been blown away by how clean the city is, how nice everyone is, and all of the bikes! (I swear, there are more bicycles here than cars, and I just love that.) Also, for the record: everyone here is very tall, and very good looking. The next stop is Belfast – I leave this afternoon and will be staying with my bff Aly and her family for the next four nights. Then it’s London (with Aly), then Paris (by myself)… ahhh… what a whirlwind! I hope you had a great week and have fun weekend plans. I know New York has been cold and snowy – seems like the perfect excuse to venture upstate or stay in with a pile of books and a big mug of tea. Whatever you’re up to, I hope it’s fab! xo

Fun things here! Bee pollen has been around forever, cool to see it’s getting some new press. Maybe I will try it again! So jealous of your Europe trip. Copenhagen is on my list. Visited my sister several times when she lived in the Netherlands. The people there are super tall too. I remember loving how big the bathtubs were! I would take a bath everyday ❤️

I’ve been adding bee pollen to almost all of my smoothies for a few years now! It’s such a great superfood with antioxidants and protein. You can also take a spoonful on its own, but I prefer it mixed into a smoothie.
