If you know me well or have been reading this blog for a long time, you can probably tell that I’m never one to shy away from a stiff drink. But sometimes I just want something light, delicious, and drinkable. Especially when the temperatures warm up. Last week, I devised this white wine spritzer while I was hanging out at home finishing up my taxes (because sometimes you need a drink when you are working on your taxes… am I right?) This one is light and refreshing and completely delicious!
To be honest, it has me fantasizing about moving to Charleston and having girlfriends over for cocktails on the porch. Ahhh, maybe someday.
You’ll need:
- White Wine
- Sparkling Water
- Mint
- Fresh Strawberries
Cut up six large strawberries, and blend on high with a little bit of water.
Strawberry puree! (As a side note, if you make too much – I did – freeze it in ice cube molds. It will be delicious later in sparkling water or… more wine.)
Add a few ice cubes to a wine glass.
Top with 3-4 spoonfuls of strawberry puree.
Break off some mint leaves and add those to the glass.
Fill with five oz. wine.
Top off with 2-3 oz. sparkling water…
Done. Drink up!
