I mentioned it in Friday’s post, but this Fall weather has me in major nesting mode. I’ve been cleaning like crazy and opting to have friends over rather than go out. My favorite thing to do on a Fall weekend is to cook up a storm and have friends over for a casual boozy brunch. Brunch turns into afternoon cocktails and my friends end up staying all day.
Today (in partnership with Mike’s Hard Lemonade), I’m sharing two easy fall brunch lemonade cocktail recipes that I’m obsessing over right now. The first is an updated twist on the bellini (light + refreshing), and the second is a bit boozier (bourbon is involved). Both are absolutely delicious – and so easy to make… perfect for all of your Fall entertaining. And the fresh herbs will have your space smelling like the local farmer’s market.
Recipe #1: Peach Thyme Lemonade:
Ingredients:
- Peaches – frozen or fresh (I used frozen as mine weren’t ripe yet!)
- Mike’s Hard Lemonade
- Thyme
- Optional – raspberries to garnish.
Take a big handful of peach slices and puree in the blender with a little bit of water. Fill a champagne glass 1/3 of the way with peach puree.
Fill to the top with Mike’s Hard Lemonade.
Add a few sprigs of fresh thyme.
Garnish with a raspberry.
Recipe #1: Honey Basil Bourbon Lemonade:
Ingredients:
- Mike’s Hard Lemonade
- Bourbon
- Fresh Honey
- Fresh Basil
In the bottom of your glass, muddle 2-3 fresh basil leaves, and add ice.
Add one oz. Bourbon.
Top off with two ounces of Mike’s Hard Lemonade.
Add a little bit of fresh honey.
Stir thoroughly.
