Today, we’re making apple martinis. It’s not what you think though… we’re making a more sophisticated take on the apple martini… It isn’t sour at all, but rather… it’s infused with thyme, and it’s completely delicious. The balance of the apple juice + subtly flavored vodka is just divine!
Ingredients:
- Vodka (I really love this apple vodka as it’s local from Hudson Valley), but any vodka will do… it also does not need to be apple infused.)
- Apple Juice
- Thyme
- Sugar
The first step is to make a thyme-infused simple syrup. Do not be afraid of this step, it’s called simple for a reason and it is actually incredibly easy. Take 1 cup of sugar and 1/2 cup water, stir until sugar is dissolved, and then bring to a boil. Reduce heat to medium/low. Add five sprigs of fresh thyme, and let it cook for five minutes, stirring occasionally. Strain, pour into a jar, and let it cool.
I like to pop my martini glasses in the freezer for an hour or two to get them nice and frosty.
Then, in a martini shaker, combine the following… (serves two!)
- 4 oz. apple juice
- 4 oz. vodka
- 2 tablespoons simple syrup.
- Ice
Shake or stir, allow to chill, strain out the ice and serve up in your chilled martini glasses.
Garnish with a sprig of fresh thyme and a slice of apple, and you’re all done!

I love making simple syrup from herbs. Sage is another great one for cocktails this time of year.
This recipe looks awesome–super autumnal and perfect for the season!!
If only I wasn’t home with a sleeping baby!! I have all the ingredients except the apple juice. I guess you can’t make an apple martini without it. Tomorrow…
